Gilt-headed bream are farmed in the Mediterranean. The gilt head bream gets its name from the golden band across its head.
The fish works well butterflied and stuffed with fillings such as pesto or dill and fennel. They are also great on a barbecue. Has a succulent meaty flavour similar to red snapper.
