Plaice is easily identified by its distinctive orange spots, which also gives an indication of freshness (the brighter the spots the fresher the plaice).
It has a pronounced flavour like lemon sole and is great for battering or serving with rich sauces.
It is best cooked on the bone (with the skin removed), or filleted.
